Five Star Cellars is located in the airport region of Walla Walla. The winery was founded in 2000 by David Huse. Starting in 2002 David’s son Matt took on winemaking responsibilities. Five Star initially focused on Cabernet, Merlot, and Syrah. More recently, they added a Bordeaux blend, Stellar, along with a Sangiovese, Malbec, Petit Verdot/Cabernet Franc blend, and a Rose. For its recent releases, Five Star has used fruit exclusively from Walla Walla Valley vineyards, including Seven Hills, Les Collines, Pepper Bridge, and others.

I gave Five Star’s 2004 Cabernet a double star (**) rating when I originally reviewed the wine at Holiday Barrel Tasting 2006, noting its rich fruit and long finish. The wine has only improved with a couple of years in the bottle.

Five Star Cellars Cabernet Sauvignon Columbia Valley 2004 An absolutely beautiful, evolving nose with black cherry, light earth, spices, anise, chocolate, and pleasing barrel notes. As the wine opens, cocoa powder and light herbal notes show through. Dances on the palate with a smooth entry with lots of fruit. Opens up and hangs on the finish. An exceptional wine. 95% Cabernet; 5% Merlot. 14.2% alcohol. 950 cases produced. $30
